- 4 oz canned diced green chiles
- 1 small onion, diced
- 2 garlic cloves, minced

- Salt and pepper to taste
- Optional: diced tomatoes, jalapenos, cooked bacon
Instructions
- Dice onions and mince garlic. Cube Velveeta for easy melting.
- Sauté onions in butter or oil over medium heat until translucent, about 2–3 minutes. Add garlic and cook 1 minute.
- Stir in diced green chiles, smoked paprika, cumin, and salt/pepper. Cook 1 minute.
- Reduce heat to medium-low. Gradually melt Velveeta cubes, stirring frequently. Add milk a little at a time until smooth.
- Taste and adjust seasoning. Optional: stir in diced tomatoes, jalapenos, or bacon.
- Serve warm with chips, veggies, or as a topping for tacos, nachos, or baked potatoes.
