  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 6 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, finely chopped
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1-2 sliced jalapeños (optional)
  • 1 avocado, diced (optional)
  • 1 cup tortilla chips, crushed
  • ½ cup Catalina dressing


Instructions

  • Brown ground beef over medium heat until cooked through. Drain excess fat.
  • Stir in taco seasoning and simmer for 3-4 minutes.
  • Chop and prepare lettuce, tomatoes, onion, beans, and corn.
  • In a large bowl, combine the veggies and beans.
  • Top with seasoned beef and shredded cheese.
  • Drizzle Catalina dressing over the salad. Toss lightly if desired.
  • Add crushed tortilla chips just before serving.
