  • lbs baby gold or red potatoes, diced

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp paprika
  • ½ tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil and butter in a large skillet over medium-high heat.
  2. Add sausage; cook until browned, then remove and set aside.
  3. Add potatoes; season with salt, pepper, and paprika. Cook until golden and tender, about 15 minutes.
  4. Stir in onions, peppers, and garlic. Sauté until softened.
  5. Return sausage to the pan; toss everything together for 3–5 minutes.
  6. Sprinkle with thyme or parsley and serve hot.
