- 2 tbsp olive oil
- 1 cup green and black olives
- 1 red bell pepper, sliced
- 1 onion, sliced

- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper, to taste
Instructions
- Pat chicken dry and season with salt, pepper, paprika, and oregano.
- Slice onion, bell pepper, and cherry tomatoes; smash garlic cloves. Zest and juice the lemon.
- Drizzle olive oil in the slow cooker. Layer vegetables first, chicken on top, then scatter olives and garlic. Pour lemon juice over everything and sprinkle thyme.
- Cook on low for 4–5 hours or high for 2–3 hours. Baste halfway through.
- Check chicken for doneness (165°F/74°C). Adjust seasoning. Serve over couscous, rice, or with pita bread.
