Ingredients

  • 6 chicken thighs, bone-in or boneless
  • 4 garlic cloves, smashed
  • 1 lemon, zest and juice
  • 2 tbsp olive oil
  • 1 cup green and black olives
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 1 cup cherry tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper, to taste


Instructions

  • Pat chicken dry and season with salt, pepper, paprika, and oregano.
  • Slice onion, bell pepper, and cherry tomatoes; smash garlic cloves. Zest and juice the lemon.
  • Drizzle olive oil in the slow cooker. Layer vegetables first, chicken on top, then scatter olives and garlic. Pour lemon juice over everything and sprinkle thyme.
  • Cook on low for 4–5 hours or high for 2–3 hours. Baste halfway through.
  • Check chicken for doneness (165°F/74°C). Adjust seasoning. Serve over couscous, rice, or with pita bread.
