Ingredients

1 lb salmon fillet (or 2 cans, well-drained)

1/2 cup breadcrumbs (panko or regular)

1 egg

1 tbsp Dijon mustard

1 clove garlic, minced

1 small shallot, finely chopped

2 tbsp chopped fresh dill or parsley

Zest of 1 lemon + 1 tbsp lemon juice

Salt and pepper to taste

1 tbsp olive oil (for cooking)
Instructions

Chop salmon into small cubes or pulse briefly in a food processor.

Sauté garlic and shallot in a small amount of olive oil until softened.

In a large bowl, combine salmon, aromatics, breadcrumbs, egg, mustard, lemon juice/zest, herbs, salt, and pepper.

Mix gently until just combined.

Shape into 4–5 equal patties. Chill for 10 minutes if needed.

Heat oil in a skillet over medium heat. Cook patties 4–5 minutes per side until golden brown.

Assemble burgers on buns with toppings of your choice.
Notes
Add a dash of cayenne for heat.
Use gluten-free breadcrumbs for a gluten-free version.
Can be baked or grilled as needed.
