Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs
- 1 cup BBQ sauce
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 2 tbsp apple cider vinegar
- 1–2 tbsp brown sugar or honey
- 1 tsp smoked paprika
- Salt and black pepper, to taste
- Optional: chili flakes for heat
Instructions
- Spray crock pot with cooking spray or use liner.
- Layer onions and garlic in the bottom of the crock pot.
- Place chicken on top of onion and garlic mixture.
- Mix BBQ sauce, apple cider vinegar, brown sugar, smoked paprika, salt, and pepper in a bowl. Pour over chicken.
- Cover and cook on low for 6–8 hours or high for 4–6 hours.
- Remove chicken and shred with two forks. Return to crock pot and stir to coat with sauce.
- Taste and adjust seasoning if needed.
Notes
- Let chicken rest before shredding for maximum juiciness.
- Combine two BBQ sauces for depth.
- Add a touch of liquid smoke for extra flavor.
- Sprinkle fresh herbs before serving.
