Description

A rich, creamy, garlicky salmon recipe that feels like a special occasion dinner. Tender salmon fillets are cooked to perfection and bathed in a luxurious sauce made with sun-dried tomatoes, Parmesan, and a hint of red pepper. This dish impresses guests and family alike, and it’s simple enough for a weeknight treat.

Ingredients

Scale
  • 4 salmon fillets, about 6 oz each
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon lemon juice
  • Salt and freshly ground black pepper, to taste
  • Fresh basil or parsley, chopped, for garnish

Instructions

  • Pat salmon fillets dry, season with salt and pepper.
  • Heat olive oil and butter in a skillet over medium-high heat. Sear salmon skin-side down for 4–5 minutes. Flip and cook for another 3–4 minutes. Remove from skillet.
  • Sauté garlic until fragrant, add sun-dried tomatoes and cook for 1–2 minutes.
  • Stir in heavy cream, Parmesan, and red pepper flakes. Simmer gently until sauce thickens, about 2–3 minutes. Adjust seasoning and add lemon juice.
  • Return salmon to skillet, spoon sauce over top, and simmer for 1–2 minutes. Garnish with fresh herbs before serving.

Notes

  • Ensure the skillet is hot before searing salmon for a golden crust.
  • Let salmon rest briefly after cooking for maximum juiciness.
  • Adjust red pepper flakes to control spiciness.
  • Pair with light sides to let the salmon and sauce shine.
