- 1 lb chicken breast or thighs, cut into bite-sized pieces

- 1/2 cup sun-dried tomatoes, chopped
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 2 tsp fresh thyme, chopped
- 2 tbsp fresh parsley, chopped
- Salt and black pepper to taste
- Pinch of red pepper flakes (optional)
- Optional: carrots, celery, spinach
Instructions
- Sauté chicken pieces in olive oil until golden; remove and set aside.
- In the same pot, cook onion and garlic until soft; add optional vegetables if using.
- Pour in chicken broth and sun-dried tomatoes; stir in thyme and simmer 10 minutes.
- Return chicken to the pot and cook for 10 more minutes.
- Reduce heat, stir in heavy cream, and finish with parsley or basil.
- Serve warm with a sprinkle of fresh herbs and crusty bread.
Notes
- For extra flavor, use bone-in chicken or homemade broth.
- Add cream at the end to avoid curdling.
- Freeze without cream; add cream when reheating.
