Ingredients

  • 1 lb chicken breast or thighs, cut into bite-sized pieces
  • 4 cups chicken broth (homemade or store-bought)
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper to taste
  • Pinch of red pepper flakes (optional)
  • Optional: carrots, celery, spinach


Instructions

  • Sauté chicken pieces in olive oil until golden; remove and set aside.
  • In the same pot, cook onion and garlic until soft; add optional vegetables if using.
  • Pour in chicken broth and sun-dried tomatoes; stir in thyme and simmer 10 minutes.
  • Return chicken to the pot and cook for 10 more minutes.
  • Reduce heat, stir in heavy cream, and finish with parsley or basil.
  • Serve warm with a sprinkle of fresh herbs and crusty bread.

Notes

  • For extra flavor, use bone-in chicken or homemade broth.
  • Add cream at the end to avoid curdling.
  • Freeze without cream; add cream when reheating.
