  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (penne or fettuccine)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ¼ tsp crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish


Instructions

  • Season chicken with salt, pepper, and Italian seasoning. Sear in olive oil until golden and cooked through. Remove from skillet.
  • Sauté garlic in the same skillet for 30 seconds until fragrant.
  • Add chicken broth and sun-dried tomatoes, simmer for 2–3 minutes.
  • Pour in cream and sprinkle Parmesan cheese, stirring until smooth. Adjust seasoning with salt, pepper, and red pepper flakes.
  • Cook pasta according to package instructions until al dente. Drain, reserving a little pasta water.
  • Slice chicken and return to skillet. Toss with pasta and sauce. Add reserved pasta water if needed.
  • Garnish with Parmesan and parsley. Serve immediately.
