  • 1 ½ lbs (700g) Yukon Gold or Russet potatoes, diced
  • 1 medium onion, chopped
  • 1 bell pepper, diced (optional)
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • 1 cup shredded cheddar cheese (or a mix of cheeses)
  • ½ tsp paprika or smoked paprika
  • Salt and black pepper, to taste
  • Fresh parsley or chives, for garnish


Instructions

  1. Prepare ingredients: Wash and dice the potatoes into small cubes. Slice sausage and chop onions, bell peppers, and garlic.

  2. Cook sausage: Heat olive oil in a large skillet over medium heat. Add sausage slices and cook until browned on both sides. Remove and set aside.

  3. Sauté vegetables: In the same skillet, add onions and bell peppers. Cook until softened. Add garlic and cook for another 30 seconds.

  4. Cook potatoes: Add diced potatoes, season with salt, pepper, and paprika. Cook covered for 15–20 minutes, stirring occasionally, until tender and golden.

  5. Combine and melt: Return sausage to the pan. Stir and cook for another 5 minutes. Sprinkle cheese over the top, cover, and let it melt completely.

  6. Garnish and serve: Top with parsley or chives before serving.
