Ingredients

  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced

  • 1 can (28 oz) crushed tomatoes or 6-7 fresh ripe tomatoes, chopped

  • 1 teaspoon dried basil or 2 tablespoons fresh basil, chopped
  • ½ teaspoon thyme (optional)
  • Salt and black pepper to taste
  • Pinch of sugar (optional)
  • Optional: red pepper flakes, splash of red wine, or knob of butter


Instructions

  • Heat olive oil in a saucepan over medium heat.
  • Sauté onions until soft, then add garlic and cook until fragrant.
  • Stir in tomato paste for 1-2 minutes to deepen flavor.
  • Add crushed or chopped tomatoes, season with salt, pepper, and sugar.
  • Stir in herbs and optional ingredients, then reduce heat to low.
  • Simmer for 15-20 minutes, stirring occasionally.
  • Taste and adjust seasoning. For smooth sauce, blend lightly with an immersion blender.
  • Optional: stir in butter before serving for richness.
