- 3 celery stalks, chopped

- 1 tsp fresh thyme leaves (or ½ tsp dried)
- Salt and pepper, to taste
- ½ cup heavy cream or half-and-half
- 1 ½ cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- ¾ cup milk (or dairy-free alternative)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Place chopped carrots, celery, and onion in the bottom of the crockpot.
- Lay chicken on top, season with salt and pepper, add garlic, thyme, and bay leaf. Pour in chicken broth.
- Cover and cook on low for 6–7 hours or high for 3–4 hours.
- Shred chicken with two forks once tender.
- Mix flour, baking powder, salt, and milk to form dumpling dough. Drop spoonfuls over the simmering broth. Cover and cook 20–25 minutes without lifting the lid.
- Stir in heavy cream and garnish with parsley before serving.
Notes
- Dumplings are best eaten fresh. For leftovers, reheat gently and add a splash of broth or milk.
