This Cottage Cheese Bread is a soft, savory loaf packed with protein from creamy cottage cheese and eggs. Ingredients

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1 1/4 cups cottage cheese (full-fat)

  • 2 large eggs

  • 1/3 cup milk

  • 1/4 cup butter, melted

  • 1 tbsp sugar (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.

  2. In a large bowl, whisk flour, baking powder, and salt.

  3. In a blender or separate bowl, mix cottage cheese, eggs, milk, melted butter, and sugar until smooth.

  4. Pour wet mixture into dry and stir until just combined. Do not overmix.

  5. Transfer to the loaf pan and smooth the top.

  6. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.

  7. Cool in pan for 10 minutes, then move to a rack to cool fully before slicing.

Notes

For a creamier texture, blend the cottage cheese fully. Add herbs, shredded cheese, or spices for extra flavor.
