Carolina BBQ Sauce is a tangy, zesty, and slightly sweet vinegar-based sauce that has been a Southern tradition for generations. Unlike thick, sugary sauces, this one is light and bold, with a sharpness that cuts through the richness of smoked and grilled meats. It’s especially famous in the Carolinas for pairing perfectly with pulled pork, chicken, and ribs. This recipe is quick to make, uses simple pantry ingredients, and keeps well in the fridge. Once you make it, you’ll see why this sauce is beloved across barbecue tables—you’ll want to drizzle it, dip it, and pour it over everything.

  • Total Time: 15 minutes
  • Yield: 2

Ingredients

Scale
  • 2 cups apple cider vinegar
  • ½ cup yellow mustard
  • ¼ cup brown sugar
  • 1 tablespoon red pepper flakes (adjust to taste)
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (optional)
  • 1 teaspoon salt

Instructions

  • Whisk together vinegar and mustard in a saucepan over medium heat.
  • Add brown sugar and stir until fully dissolved.
  • Mix in red pepper flakes, black pepper, garlic powder, onion powder, smoked paprika, and salt.
  • Simmer gently for 8–10 minutes, stirring occasionally.
  • Remove from heat and let cool.
  • Transfer to a glass jar or bottle and refrigerate until ready to use.

Notes

  • For a sweeter sauce, add an extra tablespoon of brown sugar.
  • For more spice, increase the red pepper flakes or add a dash of cayenne.
  • Sauce tastes best after resting overnight in the fridge.
