Ingredients
- 12 oz spaghetti (or pasta of choice)
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 6 garlic cloves, finely minced
- ½ cup freshly grated Parmesan cheese
- 2 tbsp chopped fresh parsley (optional)
- Salt and black pepper, to taste
- ½ cup reserved pasta water
Instructions
- Cook pasta in generously salted water until al dente. Reserve 1 cup of pasta water and drain.
- In a skillet, melt butter with olive oil over medium heat. Add garlic and sauté until fragrant and lightly golden.
- Add the cooked pasta to the skillet, tossing to coat with the garlic butter.
- Stir in Parmesan, adding pasta water a little at a time until the sauce clings to the noodles.
- Season with salt and pepper. Toss in parsley if using.
- Serve hot with extra Parmesan on top.

- Don’t skip the pasta water—it helps emulsify the sauce.
- Freshly grated cheese makes the dish creamier and more flavorful.
- A squeeze of lemon juice can balance the richness.
