Ingredients

  • 12 oz spaghetti (or pasta of choice)
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 6 garlic cloves, finely minced
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (optional)
  • Salt and black pepper, to taste
  • ½ cup reserved pasta water

Instructions

  • Cook pasta in generously salted water until al dente. Reserve 1 cup of pasta water and drain.
  • In a skillet, melt butter with olive oil over medium heat. Add garlic and sauté until fragrant and lightly golden.
  • Add the cooked pasta to the skillet, tossing to coat with the garlic butter.
  • Stir in Parmesan, adding pasta water a little at a time until the sauce clings to the noodles.
  • Season with salt and pepper. Toss in parsley if using.
  • Serve hot with extra Parmesan on top.
