- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup barbecue sauce (homemade or store-bought)
- 4 burger buns (brioche or potato)
- 4 slices cheddar or Monterey Jack cheese (optional)
- 1 cup coleslaw
- Pickles, for garnish
- Olive oil
- Salt, pepper, paprika, garlic powder, onion powder
Instructions
- Pat chicken dry and season with olive oil, salt, pepper, paprika, garlic powder, and onion powder.
- Cook chicken in a skillet over medium-high heat or bake at 400°F for 20–25 minutes. Slow cook on low for 4 hours if desired.
- Toss or brush chicken with barbecue sauce while warm.
- Toast the buns lightly.
- Assemble sandwiches: bottom bun, chicken, cheese (optional), coleslaw, pickles, top bun. Serve immediately.

- For extra flavor, marinate chicken for 30 minutes.
