Instructions
- Slice eggplant into ½-inch rounds, salt lightly, and rest for 10 minutes, then pat dry.
- Set up three bowls: flour, eggs, and seasoned breadcrumbs with parmesan.
- Coat each slice in flour, then egg, then breadcrumbs.
- Preheat air fryer to 375°F (190°C). Spray basket with olive oil.
- Arrange slices in a single layer and air fry for 12–15 minutes, flipping halfway.
- Serve hot with your favorite dipping sauce or side.
